Which matcha for baking and ice cream?
Bakeries, patisseries and gelato makers need culinary matcha. Culinary matcha comes from later harvests and is stronger and more bitter than ceremonial matcha, and that is the point: its flavour and colour carry through dough, cream and ice cream, where a delicate ceremonial matcha disappears.
| Culinary matcha (GTG202002) | Ceremonial matcha (GTG202001) | |
|---|---|---|
| Taste | Stronger, vegetal, slightly bitter | Mild and sweet, with a creamy finish |
| In dough, cream and ice cream | Keeps its colour and flavour | Fades |
| Best use | Doughs, creams, fillings, glazes, ice cream | Dusting a finished dessert, drinks |
| Packs | 100 g · 200 g pouches, 1 kg bag | 50 g tin, 100 g · 200 g pouches, 1 kg bag |

Both grades are in matcha tea.
How to work with matcha in a kitchen
Matcha needs three habits in a kitchen: sift it, disperse it and store it sealed. Matcha powder clumps, and the clumps stay as dark specks in a cream or a dough, so sift it through a fine mesh first; our stainless-steel sifter (GTG201019) is made for this. Whisk the sifted matcha into a little of the recipe's milk or cream to a smooth paste before folding it in, so it spreads evenly.
Dose by your recipe and taste, and test it with a sample before ordering in bulk. Store the bag sealed, cool and dry, and reseal it right after use, because matcha takes up moisture and smells.
How do bakeries and gelato makers order?
Our matcha range ships from our warehouse in Poland by courier — InPost and DPD within Poland, DHL across the EU — and by pallet for larger orders. The goods are already inside the EU, so there is no customs duty or clearance on your side, and VAT is settled on our sales invoice. Stock varies by product; what is not in stock is made to order, and the quotation states the date.
The 1 kg bag suits a production kitchen; the 100 and 200 g pouches suit a smaller patisserie, or a recipe still being tested.
Selling matcha in the shop
A patisserie with a counter can sell matcha as well as bake with it. The ceremonial matcha comes in a 50 g tin and 100 and 200 g pouches with EAN codes, and ceramic sets with a bowl, a bamboo whisk, a holder and a scoop are in matcha sets.
