How do restaurants and hotels use matcha?
Restaurants and hotels use matcha in the kitchen, at the bar and at the table. The kitchen uses culinary matcha in desserts, creams and ice cream; the bar and the breakfast buffet serve matcha lattes; and a restaurant, a tea lounge or a hotel spa can serve matcha the traditional way, whisked in a bowl. Each use calls for its own grade and tools.
| Use | Grade | Tools |
|---|---|---|
| Desserts, creams, ice cream | Culinary matcha (GTG202002) | Sifter (GTG201019) |
| Matcha latte at the bar or at breakfast | Culinary matcha (GTG202002) | 100-prong whisk (GTG201001), sifter |
| Matcha served at the table | Ceremonial matcha (GTG202001) | Ceramic set with bowl, whisk, holder and scoop (GTG203001, GTG203015) |
Which grade for the kitchen, and which for the table?
Culinary matcha belongs in the kitchen and at the bar, and ceremonial matcha at the table. Culinary matcha is stronger and slightly bitter, so it holds its colour and flavour in milk, cream and dough. Ceremonial matcha is milder and sweeter and is whisked with water at 70–80 °C, about 2 g per serving, so a 1 kg bag makes about 500 servings.
Both grades come in 1 kg bags, with Japan as the origin and Global Trade Group as the importer. They are in matcha tea.
What does table service of matcha need?
Table service of matcha needs four tools at every station: a bowl (chawan), a bamboo whisk (chasen), a whisk holder (kusenaoshi) and a scoop (chashaku). Our four-piece ceramic sets hold all four in one box: the Zen set with a classic wide chawan, celadon sets with a soft, jade-like glaze, and rustic sets in bronze and stone glazes.
For a premium service, the 120-prong whisk (GTG201005) whips the finest, densest foam in our range. The sets are in matcha sets.
How do restaurants and hotels order?
Our matcha range ships from our warehouse in Poland by courier — InPost and DPD within Poland, DHL across the EU — and by pallet for larger orders. The goods are already inside the EU, so there is no customs duty or clearance on your side, and VAT is settled on our sales invoice. Stock varies by product; what is not in stock is made to order, and the quotation states the date.
Send the quote form with the products and quantities you need; samples are available before a bulk order.
